Fine seasoning ingredients:

  • 6 cloves garlic,
  • 8 cloves of shallots,
  • 6 red curly chilies,
  • Slice 1 sachet dried shrimp paste or prawn sauce,
  • Oil to taste.

 

Fried rice ingredients:

  • 350 gr of rice
  • 1 egg
  • 40 gr of cabbage,
  • sliced 35 gr carrots,
  • Cut into small squares 2 leeks, sliced
  • 1 tbsp sweet soy sauce
  • 2 tsp fish sauce/salted soy sauce
  • 1 tsp powdered broth/flavoring
  • 1/4 tsp peppercorns
  • 1 1/2 tsp ground turmeric
  • 1 tbsp fine seasoning
  • 100 ml of water
  • 1/2 tbsp sugar

 

Other complementary materials:

  • Fried egg
  • Pickles (cucumber, carrot, onion, green cayenne)
  • Fried onion shrimp crackers
  • Tomato Cucumber

 

How to make kampung fried rice and its complementary toppings

  1. Puree the garlic, onion, and oil, blender until smooth, then separate some of the seasonings.
  2. Put in the curly red chilies and dried shrimp paste, puree together the delicate herb.
  3. Split the chicken breast into two pieces for the chicken shredded then cut.
  4. Mix the chicken thighs and fillet breast for the fried chicken, marinate with chicken broth, salt, pepper, turmeric powder, fine seasoning, water and sugar, mix well, and let stand for 45-60 minutes.
  5. Heat the chicken cooking oil on a low heat until browned drain, then shredded chicken breast.
  6. For the fried rice, sauté the seasoning finely until fragrant, then put in the eggs, stirring well.
  7. Put in some leeks, chicken, and carrots, stirring well.
  8. Set in the fish sauce and rice, mix well, then add the powdered broth, pepper, sweet soy sauce, cabbage, and the rest of the leeks, stirring well.
  9. Fried rice is ready to be served with a compliment.
