Rendang (also) known as Rendang Padang is a Minang signature dish from the Minangkabau province of West Sumatra, Indonesia. It is recognized as one of the delicious of Indonesia’s national dishes. It is meat full of typical spice wraps with perfect absorbent flavours and tender textures. In addition, Rendang is mainly dishes for special occasions, for example, during the Hari Raya or Islamic celebration, Eid al-Fitri and Eid al-Adha.
Rendang is a favourite of almost all Indonesians and most non-Indonesian. Why? I bet you are wondering. Here are the answers! Here is the special Rendang recipe for those interested in making Rendang without further ado!
Ingredients:
- 5 kg of clean meat,
- 2 liters of coconut milk.
- 2 lemongrass leaves.
- 4 sheets lime leaves.
- 2 cm candid acid or garcinia atroviridis.
- 2 sheets of turmeric leaves, conclude.
- 5 candlenuts.
- 6 cloves garlic.
- 100 grams of large red pepper.
- 12 onions.
- 100 grams curly red chili.
- 2 cm ginger that already burned.
- 2 cm galangal.
- 3 cm grilled turmeric.
- 1/2 tbsp coriander.
- 2 tsp salt.
- 1/2 tsp nutmeg.
- 1 tsp roasted cumin.
Directions, step-by-step;
- Cut into pieces of rendang meat with a diced shape or according to taste. But, keep in mind never cut meat too small so as not to disintegrate when cooked.
- Put the coconut milk in a large frying pan, then lemongrass, sliced shallots, sour and turmeric leaves. Stir until the coconut milk boils, and make sure the coconut milk you cook doesn’t break.
- Once it boils, slowly put in the seasoning that has been mashed and occasionally stirs for 20 to 30 minutes.
- When coconut milk starts to oily, it’s time to include pieces of rendang meat that have been cut. Cook over low heat until the coconut milk thickens and dries and seasoning soaks in.
- Cook the meat tender and cook evenly, do not forget to continue stirring so that the base does not rub.
- Once cooked or finished, turn off the stove, and Rendang Padang beef is ready to be served with warm white rice or mashed potatoes.
